Intra Site Mailbox Move

Relatively simple question (Exchange 2010, Clients are Outlook 2010)

I'm replaced a physical server with a new virtual server, (both Multi role) I've got no CAS array,

on the new databases the RPCClientAccess Server is set to the new server.

What's the correct method to move the mailboxes and have the outlook profiles update to point to the new server?

From what I have read it's not so simple,

Method A, (before moving) create a CAS array, and update the RPCClientAccessServer on both sets of databases to the CAS array. Point the CASArray to either one or the other server controllable via DNS...

Method B Update the RPCClientAccessServer on the old server databases to point to the new server, on the new server point the RPCClientAccessServer to itself, Then move themailboxes.

also if you have already moved the mailboxes you must remove/uninstall the OLD cas server remove the DNS entries, power off the server wait at least 30 mins (for cache to expire) and then open outlook autodiscover will then re-configure the outlook client.

My question Are both method A and B technically correct?

another question if I'm pointing to a CASArray and I move site to another site where there is a CASArray, will my outlook update to point to the new CASArray or will it remain connected to my source site?
