Minimum configuration

I have 11 computers that are used to run training course on some third party software. One small function of that software is to send plain text email with a single, small attachment. Students need to open Outlook to see any received mail and to send these simple emails.  The training environment is self contained (no connection to any corporate network or the internet).  The peak load would be each student sending two emails to one of the other students in one 8 hour training course.  At the end of each days training all emails can be permanently deleted.

To emphasise, all that is required is sending and receiving a trivially small number of plain text emails.  There is no web access, no iPhone access, no voicemail, no spam, no viruses, no external systems of any kind.

How would I install/configure Exchange 2013 for such a tiny requirement?  I have tried to find documentation that might help me to know what can be disabled/deleted/configured away but had no luck.  I have tried doing a default installation but my 'paultry' 4GB server

The server is a running WinSrv 2008R2.
