Uninstall Exchange Server after migration to Google Apps

I have a small 50 user domain running Exchange Server 2010 that was upgraded previously from SBS 2003. We have since migrated to Google Apps and now all email is running on Google Apps. The Exchange server is still online and is used for local MTA (which will be replaced with some SMTP engine) but the time has come to remove it. I've tried running the Add/Remove for Exchange 2010 and removing the roles but it fails because it has a Mailbox Database, Offline Address Book, etc.. What is the process for uninstalling Exchange from the domain now that we have migrated elsewhere? 

1. I have taken a System State backup of the domain controller

2. I have also powered off the Exchange Server and backed up the VHD's (Hyper-V Exchange environment)

It seems like Exchange doesn't want to let me uninstall because there is no other Exchange Server that has taken over it's job functions, but that isn't important, as like I said earlier, we are now using 99% of email function on Google Apps.
